- 8 oz halloumi cheese
- 2 tbsp sweet chili sauce
- 2 large tortillas
- 1 cup bell peppers (sliced)
- 1 cup fresh spinach
- 1 tbsp olive oil
Instructions
- Slice the halloumi into half-inch thick pieces.
- Heat olive oil in a frying pan over medium heat. Add halloumi slices and cook until golden brown, about 3-4 minutes per side.
- While the halloumi cooks, slice bell peppers. Add them and spinach to the pan during the last couple of minutes of cooking.
- Spread sweet chili sauce down the center of each tortilla, then layer with halloumi and sautéed veggies.
- Roll tortillas tightly around the filling, tucking in the ends as you go.
- Serve with extra sweet chili sauce drizzled on top.
