- 1/4 cup sweet chili sauce (plus 1/4 cup for coating)
- 1 tbsp soy sauce (low-sodium)
- 2 tbsp honey
- 1 tbsp lime juice
- Fresh cilantro (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, ginger, garlic, green onions, soy sauce, and half of the sweet chili sauce. Mix gently until combined.
- Form the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
- Bake for 20-25 minutes or until golden brown and cooked through.
- In a skillet over medium heat, toss the baked meatballs with remaining sweet chili sauce for about 5 minutes.
- Drizzle with honey and lime juice before serving; garnish with cilantro if desired.
