  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 tbsp fresh ginger, grated
  • 3 garlic cloves, minced
  • 2 green onions, chopped
  • 1/4 cup sweet chili sauce (plus 1/4 cup for coating)
  • 1 tbsp soy sauce (low-sodium)
  • 2 tbsp honey
  • 1 tbsp lime juice
  • Fresh cilantro (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, ginger, garlic, green onions, soy sauce, and half of the sweet chili sauce. Mix gently until combined.
  3. Form the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes or until golden brown and cooked through.
  5. In a skillet over medium heat, toss the baked meatballs with remaining sweet chili sauce for about 5 minutes.
  6. Drizzle with honey and lime juice before serving; garnish with cilantro if desired.
