  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 tbsp cornstarch
  • 2 tbsp low-sodium soy sauce
  • 3 cloves fresh garlic, minced
  • 1 cup bell peppers, sliced (mixed red and green)
  • 1 cup pineapple chunks (fresh or canned)
  • 2 tbsp vegetable oil (for frying)
  • 1/4 cup ketchup
  • 1/4 cup water
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 tsp sesame oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Cut the chicken breasts into bite-sized pieces. In a bowl, combine chicken with soy sauce, garlic, and cornstarch. Let marinate for at least 15 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken in batches and fry until golden brown on all sides (about 5 minutes). Remove and set aside on paper towels.
  3. In the same skillet, add bell peppers and pineapple chunks. Sauté for about 3 minutes until slightly softened.
  4. In a separate bowl, whisk together ketchup, water, rice vinegar, brown sugar, and sesame oil. Pour over the sautéed vegetables and simmer for 5 minutes until thickened.
  5. Return the chicken to the pan and stir until well-coated in the sauce. Garnish with chopped green onions before serving.
