  • 1 lb ground lamb or beef
  • 2 medium carrots, diced
  • 1 cup green peas (frozen or fresh)
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 2 tsp fresh thyme, chopped
  • 4 tbsp butter
  • ½ cup cream
  • 1 cup sharp cheddar cheese, grated
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Prepare the potatoes by washing, peeling, and cubing them.
  2. In a large skillet, heat olive oil over medium heat. Sauté onions until translucent.
  3. Add ground meat to the skillet and cook until browned. Stir in diced carrots and green peas.
  4. Season with salt, pepper, and thyme; simmer for about 10 minutes.
  5. Boil potato cubes in salted water until fork-tender. Drain and mash with butter and cream until smooth.
  6. Preheat oven to 400°F (200°C). In a baking dish, layer the meat mixture first, then spread mashed potatoes over the top.
  7. Bake for 25-30 minutes until the top is golden brown.
