- 3–4 lb boneless pork loin roast
- 1 cup fresh apple cider
- 2 medium onions, thinly sliced
- 4 garlic cloves, minced
- 5 sprigs fresh thyme (or 1 tsp dried thyme)
- 1/2 cup brown sugar
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
- Pat the pork roast dry and season generously with salt and pepper.
- In a skillet over medium heat, sauté sliced onions and minced garlic in olive oil until soft (about 5 minutes).
- In a bowl, whisk together apple cider, brown sugar, Dijon mustard, and thyme until well combined.
- Place the pork in the baking dish on top of the sautéed onions. Pour half of the glaze over the pork. Cover with foil and bake for about 2 hours.
- Uncover during the last 15 minutes of cooking time and drizzle remaining glaze over the pork. Broil for an additional 5 minutes until caramelized.
