  • 1 medium spaghetti squash
  • 2 tbsp extra virgin olive oil
  • 1 lb lean ground turkey
  • 1 cup diced bell peppers (any color)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup marinara tomato sauce
  • 1 cup grated mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Halve the spaghetti squash lengthwise and scoop out the seeds. Drizzle olive oil inside each half and season with salt and pepper. Place cut side down on the baking sheet and roast for 30-40 minutes until tender.
  3. In a skillet over medium heat, warm olive oil. Sauté chopped onion and garlic until fragrant. Add ground turkey and cook until browned.
  4. Stir in diced bell peppers, seasoning with salt, pepper, and herbs. Cook for five minutes before mixing in tomato sauce; let simmer.
  5. Once the squash is cool enough to handle, scrape out strands using a fork and mix them with the filling. Stuff back into the squash halves, top with cheese, and bake for an additional 10 minutes until bubbly.
