  • 4 cups all-purpose flour
  • 1 packet (2¼ tsp) active dry yeast
  • 1½ cups warm water (110°F)
  • ¼ cup granulated sugar
  • ⅓ cup baking soda
  • 1 tsp coarse sea salt (plus more for topping)
  • 6 strips cooked bacon (chopped)
  • 4 large eggs (scrambled)
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. In a mixing bowl, combine warm water and sugar; sprinkle yeast on top and let sit for 5 minutes until foamy. Stir in flour and salt to form a soft dough.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Place in an oiled bowl, cover with a towel, and let rise in a warm spot for about 1 hour or until doubled.
  3. While dough rises, cook bacon until crispy; drain and chop. Scramble eggs with salt and pepper. Mix bacon, eggs, and cheese in a bowl.
  4. Once risen, punch down the dough and divide into approximately 10 pieces. Roll each piece into a ball, flatten slightly, add filling in the center, pinch to seal.
  5. Boil water in a pot with baking soda; drop filled rolls in for about 30 seconds each before removing with a slotted spoon.
  6. Preheat oven to 425°F. Place rolls on parchment-lined sheets, sprinkle with sea salt, and bake for about 20 minutes or until golden brown.
