Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat together butter, granulated sugar, and brown sugar until creamy.
  3. Add egg and vanilla; mix until fluffy.
  4. In another bowl, whisk flour and baking powder; gradually mix into wet ingredients until combined.
  5. Fold in chopped strawberries gently.
  6. For the cheesecake filling, mix cream cheese, powdered sugar, and lemon zest until smooth.
  7. Drop dough onto prepared sheets; create indents for filling.
  8. Fill each indent with about half a teaspoon of cream cheese mixture.
  9. Bake for 12-15 minutes until edges are golden but centers remain soft.
  10. Cool on sheets for five minutes before transferring to wire racks.
