Instructions
- Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, cook the chorizo until browned and crumbly for about 5-7 minutes.
- Layer the bottom of the baking dish with potato slices, followed by half of the cooked chorizo, a drizzle of enchilada sauce, and a sprinkle of cheese.
