Description

  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup heavy cream (for filling)
  • 2 cups powdered sugar (for filling)
  • Black licorice twists (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time along with vanilla extract, mixing until smooth.
  5. Gradually combine dry ingredients into the wet mixture until just blended.
  6. Drop mounds of dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes until puffed.
  7. Let cookies cool completely on wire racks.
  8. While cooling, whip heavy cream with powdered sugar until soft peaks form.
  9. Assemble whoopie pies by spreading filling between cookie pairs and decorate with black licorice twists.
