  • 1 cup sushi-grade salmon, diced
  • 2 tablespoons spicy mayo (mayonnaise + sriracha)
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • Sesame seeds for garnish
  • Nori sheets (cut into squares)

Instructions

  1. Rinse sushi rice under cold water until clear; cook according to package instructions.
  2. Transfer warm rice to a bowl and drizzle with rice vinegar, folding gently to season.
  3. Preheat oven to 375°F (190°C). Press seasoned rice into muffin tins lined with nori sheets and bake for about 10 minutes until slightly crispy.
  4. In a bowl, mix diced salmon with spicy mayo; adjust spice level as desired.
  5. Once the rice cups cool, fill each with the salmon mixture and top with avocado and cucumber slices.
  6. Finish with sesame seeds and additional spicy mayo if desired. Serve immediately or chill before serving.
