  • 2 cups cooked short-grain sushi rice
  • 1 lb fresh salmon fillets, diced
  • 1/2 cup mayonnaise (preferably Kewpie)
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 3 green onions, finely chopped
  • 1/2 cup panko breadcrumbs
  • 2 tbsp toasted sesame seeds

Instructions

  1. Preheat oven to 375°F (190°C). Cook sushi rice according to package instructions; let cool slightly.
  2. In a bowl, combine diced salmon, mayonnaise, and Sriracha until well-coated.
  3. Spread the cooled rice evenly into a greased baking dish. Spoon the salmon mixture on top, spreading it evenly.
  4. Toast panko breadcrumbs in a pan over medium heat until golden brown; sprinkle over the salmon layer.
  5. Bake uncovered for about 20 minutes or until bubbly and golden brown.
  6. Garnish with toasted sesame seeds and chopped green onions before serving.
