Spicy Maple Chicken & Coconut Rice combines succulent chicken marinated in a sweet and spicy maple glaze, served on a bed of creamy coconut rice.   • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup pure maple syrup
  • 1/4 cup low-sodium soy sauce
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup jasmine rice
  • 1 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, whisk together maple syrup, soy sauce, minced garlic, and red pepper flakes.
  4. Place chicken in the baking dish and pour marinade over it. Let marinate while preparing the rice.
  5. In a saucepan, combine jasmine rice, coconut milk, and an equal amount of water (1 cup). Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes.
  6. Bake marinated chicken for 25-30 minutes until cooked through (165°F internal temperature).
  7. Fluff coconut rice with a fork and serve alongside the chicken; drizzle any remaining marinade on top.
