- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1/2 cup pure maple syrup
- 1/4 cup low-sodium soy sauce
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup jasmine rice
- 1 tsp red pepper flakes
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish with nonstick spray.
- Season chicken breasts with salt and pepper.
- In a bowl, whisk together maple syrup, soy sauce, minced garlic, and red pepper flakes.
- Place chicken in the baking dish and pour marinade over it. Let marinate while preparing the rice.
- In a saucepan, combine jasmine rice, coconut milk, and an equal amount of water (1 cup). Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes.
- Bake marinated chicken for 25-30 minutes until cooked through (165°F internal temperature).
- Fluff coconut rice with a fork and serve alongside the chicken; drizzle any remaining marinade on top.
