  • 1 cup spicy kimchi, chopped
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 4 green onions, chopped (white and green parts)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  2. Add minced garlic and chopped kimchi; sauté for 3–4 minutes until fragrant.
  3. Stir in day-old rice, breaking up clumps, and cook until heated through.
  4. Mix in soy sauce and gochujang until evenly coated.
  5. Push rice to one side, pour in beaten eggs, scramble, then mix into the rice.
  6. Drizzle with sesame oil and sprinkle with green onions before serving hot.
