  • 1 bell pepper, diced
  • 2 tbsp olive oil
  • Fresh cilantro (optional)

Instructions

  2. Stir in minced garlic, cumin, and chili powder; cook for an additional minute until fragrant.
  3. Add the rice to the skillet, stirring to coat each grain with the spices. Toast the rice for about 2-3 minutes.
  4. Pour in the chicken broth and tomato sauce, mixing well. Bring to a simmer and then reduce heat to low.
  5. Cover tightly and cook for about 20 minutes, allowing the rice to absorb all flavors until tender.
