  • 5 lbs bone-in leg of lamb
  • 6 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 tbsp fresh oregano, chopped
  • 2 tbsp fresh rosemary, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup red wine (optional)
  • 1 large onion, sliced
  • 2 carrots, sliced

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, rosemary, salt, and pepper.
  3. Rub the marinade generously over the leg of lamb and let it marinate for at least one hour.
  4. Place the marinated lamb in a roasting pan surrounded by sliced onions and carrots.
