Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 bay leaves
  • 3 medium potatoes, peeled and chopped
  • 2 tbsp soy sauce
  • 2 tbsp cooking oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large pot or Dutch oven over medium-high heat, add oil and sear the beef until browned on all sides. Remove the beef and set aside.
  3. Sauté onions and garlic in the same pot until fragrant and translucent.
  4. Return the beef to the pot along with tomato sauce, soy sauce, bay leaves, salt, pepper, and enough water to cover the meat. Bring to a gentle boil.
  5. Add chopped potatoes to the mixture. Cover the pot and reduce heat to low; let simmer for about 2 hours or until the beef is fork-tender.
  6. Remove bay leaves before serving over rice or with crusty bread.
