Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup fresh basil leaves
  • 1 cup cherry tomatoes, halved
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil (divided)
  • 3 garlic cloves
  • Salt and pepper, to taste
  • 1 tbsp capers (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and drizzle lightly with olive oil.
  2. In a food processor, blend basil leaves, garlic, lemon juice, 2 tbsp olive oil, salt, and pepper until smooth.
  3. Place salmon fillets on the baking sheet and spoon basil sauce over each fillet. Bake for 12-15 minutes until flaky.
  4. Prepare tomato salad by tossing halved cherry tomatoes with remaining olive oil, capers (if using), salt, and pepper in a bowl.
  5. Once salmon is cooked through, serve alongside the tomato salad.
