  • 2 (6 oz) salmon fillets
  • 1 sheet puff pastry (thawed)
  • 2 cups fresh spinach (chopped)
  • 4 oz cream cheese
  • 1 tbsp fresh dill (chopped)
  • Zest of 1 lemon
  • 1 large egg (beaten with 1 tbsp water for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté chopped spinach until wilted, about 2 minutes. Stir in cream cheese until melted.
  3. Roll out puff pastry on a floured surface to about 1/8 inch thick and cut into squares large enough to wrap around the salmon fillets.
  4. Place each salmon fillet in the center of a pastry square and top with dill and lemon zest.
  5. Fold the pastry over the salmon, sealing the edges tightly.
  6. Brush each Wellington with the egg wash and place on a parchment-lined baking sheet.
  7. Bake for 20-25 minutes until golden brown and puffed.
