  • 2 tsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 2 cups corned beef, shredded
  • 1 cup sauerkraut, rinsed and drained
  • 4 cups low-sodium beef broth
  • 1 cup heavy cream
  • 1 cup Swiss cheese, shredded
  • 1 tsp caraway seeds
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and carrot; sauté until soft (about 5 minutes).
  2. Stir in shredded corned beef and cook for an additional 3 minutes.
  3. Add sauerkraut and caraway seeds; mix well.
  4. Pour in beef broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Gradually stir in heavy cream; simmer gently for another 5 minutes.
  6. Mix in Swiss cheese until melted and smooth. Season with salt and pepper as needed.
