- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ½ cup granulated sugar (divided)
- 16 oz cream cheese, softened
- ½ cup sour cream
- 2 tsp vanilla extract
- 3 large eggs
- 1 cup fresh raspberries
- 1 cup fresh blueberries
Instructions
- Preheat oven to 325°F (160°C). Line an 8×8 inch baking dish with parchment paper.
- For the crust, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of the prepared dish.
- In a bowl, beat cream cheese and sour cream until smooth. Gradually add remaining sugar and vanilla extract. Mix in eggs one at a time until just combined.
- Fold half of the raspberries into one side of the cheesecake mixture and half of the blueberries into another side. Pour over crust in alternating dollops to create swirls.
- Bake for 35-40 minutes or until set but slightly jiggly in the center. Cool completely at room temperature, then refrigerate for at least four hours before serving.
