Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 325°F (160°C). Line an 8×8 inch baking dish with parchment paper.
  2. For the crust, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of the prepared dish.
  3. In a bowl, beat cream cheese and sour cream until smooth. Gradually add remaining sugar and vanilla extract. Mix in eggs one at a time until just combined.
  4. Fold half of the raspberries into one side of the cheesecake mixture and half of the blueberries into another side. Pour over crust in alternating dollops to create swirls.
  5. Bake for 35-40 minutes or until set but slightly jiggly in the center. Cool completely at room temperature, then refrigerate for at least four hours before serving.
