  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring
  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar (sifted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two round baking pans.
  2. In one bowl, whisk together flour, cocoa powder, baking soda, and baking powder.
  3. In another bowl, beat sugar and oil until well combined. Add eggs one at a time, then mix in buttermilk, vanilla extract, and red food coloring.
  4. Gradually combine dry ingredients with wet mixture until just mixed.
  5. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. For the frosting, beat cream cheese and butter until fluffy; gradually add powdered sugar and vanilla extract until smooth.
  7. Cool cakes completely before frosting between layers and on top.
