  • 2 small zucchinis, diced
  • 1 cup mixed bell peppers (red, yellow, green), diced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil

Instructions

  1. Wash and chop the eggplant, zucchinis, bell peppers, onion, and garlic into bite-sized pieces.
  2. In a large pot over medium heat, sauté the onion in olive oil until translucent (about 5 minutes). Add garlic and sauté for an additional 30 seconds until fragrant.
  3. Introduce the diced eggplant first; cook for about 5 minutes. Then add zucchini and bell peppers; sauté until softened (another 5 minutes).
  4. Stir in the diced tomatoes with their juices and vegetable broth; bring to a boil.
  5. Reduce heat and let it simmer covered for about 30 minutes.
  6. Before serving, stir in fresh basil and adjust seasoning with salt if needed.
