  • 1 lb large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in a pot of salted boiling water until al dente; reserve some pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add broccoli florets and sauté until bright green and tender-crisp (about 3-4 minutes).
  3. Stir in minced garlic and add shrimp; cook until shrimp turn pink and opaque (about 3-5 minutes).
  4. Pour in heavy cream and Cajun seasoning; simmer until slightly thickened (2-3 minutes). Stir in Parmesan cheese.
  5. Toss cooked fettuccine into the skillet, mixing thoroughly. If needed, add reserved pasta water to reach desired consistency.
  6. Serve hot, garnished with extra Parmesan or fresh parsley if desired.
