  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 cup pumpkin puree
  • ¾ cup brown sugar
  • 2 large eggs
  • ½ cup unsalted butter (melted)
  • 8 oz cream cheese (softened)
  • 1 tbsp granulated sugar (for cream cheese mixture)
  • ¼ cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare muffin tins with liners or cooking spray.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix pumpkin puree, brown sugar, and eggs until smooth then add melted butter.
  4. Combine wet ingredients with dry ingredients gently until just mixed.
  5. In a small bowl, beat cream cheese with granulated sugar until smooth.
  6. Fill muffin cups halfway with batter, add cream cheese mixture on top, then cover with remaining batter. Swirl gently using a toothpick.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
