- In another bowl, mix pumpkin puree, brown sugar, and eggs until smooth then add melted butter.
- Combine wet ingredients with dry ingredients gently until just mixed.
- In a small bowl, beat cream cheese with granulated sugar until smooth.
- Fill muffin cups halfway with batter, add cream cheese mixture on top, then cover with remaining batter. Swirl gently using a toothpick.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
