  • ⅓ cup vegetable oil
  • 4 oz cream cheese (softened)

Instructions

  3. In another bowl, mix together pumpkin puree, eggs, and vegetable oil until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. In a separate bowl, beat softened cream cheese with a little sugar until creamy. Fold dollops into the muffin batter for a swirl effect.
  6. Spoon the batter into prepared muffin cups about two-thirds full. Bake for 20-25 minutes or until a toothpick comes out clean.
