  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 2 large eggs
  • 1/2 cup milk (whole or low-fat)
  • 1/2 cup melted butter
  • 1/4 cup melted butter (for topping)
  • 1/4 cup cinnamon-sugar mixture (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, granulated sugar, brown sugar, cinnamon, and a pinch of salt.
  3. In another bowl, mix the pumpkin puree, eggs, and milk until smooth. Fold this into the dry ingredients until just combined.
  4. In a small bowl, mix melted butter with the cinnamon-sugar for the swirl.
  5. Spoon half of the batter into muffin cups, drizzle with cinnamon-sugar mixture, then add remaining batter on top.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool slightly before serving.
