- 2 cups Yukon Gold potatoes, thinly sliced
- 1 cup leeks, cleaned and sliced
- 1 cup heavy cream
- 1 cup Gruyère cheese, shredded
- 2 tbsp butter
- Salt and pepper to taste
- 1/2 cup panko breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a muffin pan.
- In a skillet, melt butter over medium heat. Sauté the leeks until softened, about 5 minutes.
- Layer potato slices and sautéed leeks into the muffin cups.
- Pour heavy cream over the layers and season with salt and pepper.
- Sprinkle Gruyère cheese on top followed by panko breadcrumbs mixed with melted butter.
- Bake for 30-35 minutes until golden brown and bubbly. Allow to cool slightly before serving.
