  • 1/2 cup finely ground pistachios
  • 1 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 cup fresh strawberries, pureed
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the ground pistachios.
  3. In a separate bowl, whisk together the flour and baking powder. Gradually add this mixture to the wet ingredients alternately with the milk, starting and ending with flour.
  4. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes until golden brown. Allow cooling on a wire rack.
  5. For the strawberry buttercream, beat softened butter until creamy. Gradually mix in powdered sugar and strawberry puree until smooth.
  6. Frost cooled cupcakes with strawberry buttercream before serving.
