  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup chopped roasted pistachios
  • 1/2 cup heavy cream
  • 1/2 cup white chocolate chips

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. 2. In a medium saucepan over low heat, melt the butter. Stir in granulated and brown sugars until fully combined.
  3. 3. Allow to cool slightly, then add eggs one at a time, whisking vigorously after each addition. Mix in vanilla extract.
  4. 4. In another bowl, whisk together cocoa powder, flour, baking powder, and salt. Gradually fold into the wet mixture until just combined.
  5. 5. Gently fold in chopped pistachios.
  6. 6. Pour the batter into the prepared pan and bake for about 25-30 minutes or until a toothpick comes out mostly clean.
  7. 7. For the ganache, heat heavy cream until simmering, then remove from heat and stir in white chocolate chips until melted and smooth.
