  • 4 bone-in pork chops (1-inch thick)
  • 1 cup fresh pineapple, diced
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/2 cup pineapple juice

Instructions

  1. In a bowl, mix soy sauce, brown sugar, minced garlic, and pineapple juice until smooth. Place the pork chops in a resealable bag or shallow dish and pour half of the marinade over them. Let marinate for at least 30 minutes.
  2. Preheat a skillet over medium-high heat and add olive oil.
  3. Remove the pork chops from the marinade (discard leftover marinade). Sear the chops for about 5-7 minutes on each side until they reach an internal temperature of 145°F.
  4. In the last few minutes of cooking, add pineapple chunks to the skillet to caramelize.
  5. Drizzle reserved marinade over everything in the pan during the last moments of cooking.
  6. Allow pork chops to rest for about 5 minutes before serving.
