  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh basil pesto
  • 4 flatbreads
  • 2 cups shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking sheet with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown (about 6-7 minutes per side) until the internal temperature reaches 165°F.
  3. Remove the chicken from the skillet and let it rest before slicing.

  5. Place the assembled flatbreads on the baking sheet and bake for 10-12 minutes or until the cheese is bubbly and golden.
