Ingredients

  • 1/2 cup natural peanut butter (unsweetened)
  • 1/2 cup honey or maple syrup
  • 1 cup rolled oats
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Cook the quinoa according to package instructions and let it cool.
  2. In a large bowl, combine peanut butter and honey (or maple syrup) until smooth.
  3. Mix in the cooked quinoa and rolled oats; stir until well combined.
  4. If desired, fold in dark chocolate chips.
  5. Line an 8×8 inch baking dish with parchment paper and press the mixture evenly into the dish.
