  • 1 crusty baguette (sliced into ½-inch pieces)
  • 1 cup fresh or frozen peas (thawed)
  • 1 cup ricotta cheese
  • 4 oz thinly sliced prosciutto
  • Zest of 1 lemon
  • 2 tbsp extra virgin olive oil (plus more for drizzling)
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and drizzle lightly with olive oil. Toast for 8-10 minutes until golden brown.
  2. In a bowl, mix peas with lemon zest and a pinch of salt. Mash gently, leaving some whole for texture.
  3. In another bowl, combine ricotta cheese with olive oil and salt until smooth.
  4. Spread ricotta mixture over each toasted baguette slice. Top with the mashed pea mixture and artfully lay prosciutto strips on top.
  5. Drizzle assembled crostini with additional olive oil and sprinkle with black pepper before serving.
