Ingredients

Scale
  • 1 cup almond flour (100g)
  • 1 ½ cups powdered sugar (150g)
  • 3 large egg whites (room temperature)
  • ½ cup granulated sugar (100g)
  • ¼ cup raspberry puree (60ml)
  • 1 tsp rose water
  • ½ cup unsalted butter, softened (115g)
  • Optional: Pink gel food coloring

Instructions

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together almond flour and powdered sugar until combined, sifting to remove lumps.
  3. In a separate bowl, beat egg whites on medium speed until soft peaks form. Gradually add granulated sugar, continuing until stiff peaks appear.
  4. Gently fold in raspberry puree and rose water into the meringue mixture, adding food coloring if desired.
  5. Transfer batter to a piping bag and pipe small circles onto prepared baking sheets, leaving space between each.
  6. Let piped macarons rest for about 30 minutes until they form a dry skin.
  7. Bake one tray at a time for 15-20 minutes until firm; cool completely before removing from sheets.
  8. For the filling, beat softened butter until creamy; gradually mix in powdered sugar, raspberry puree, and rose water until smooth.
  9. Pair similar-sized shells, pipe filling onto one half, and gently sandwich them together.
