  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 yellow onion, chopped
  • 2 medium carrots, thinly sliced
  • 1 red bell pepper, diced
  • 1 cup long-grain rice (basmati or jasmine)
  • 2 cups low-sodium chicken broth
  • 1 cinnamon stick
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • A pinch of saffron (optional)
  • Zest and juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken until browned on both sides (about 5 minutes each). Remove from skillet.
  2. 2. In the same skillet, sauté onions, garlic, carrots, and red bell peppers until soft (about 5 minutes).
  3. 3. Stir in cumin, coriander, cinnamon stick, salt, and pepper. Add rice and mix well to coat.
  4. 4. Pour in chicken broth along with lemon juice and zest. Return the chicken to the pan. Bring to a gentle boil then reduce heat to low.
  5. 5. Cover tightly and simmer for 20 minutes until rice is fluffy and liquid is absorbed.
