  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 1 lb lean ground beef or turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp taco seasoning
  • 1 cup Greek yogurt or ricotta cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Fresh cilantro or parsley for garnish

Instructions

  1. Prepare the eggplant by sprinkling salt on the slices and letting them sit for 30 minutes to remove excess moisture.
  2. In a skillet over medium heat, sauté chopped onion in olive oil until translucent. Add minced garlic and ground meat; cook until browned.
  3. Stir in diced tomatoes and taco seasoning; let simmer until thickened.
  4. In a baking dish, layer half of the eggplant rounds, followed by half of the meat mixture. Repeat layers and top with Greek yogurt or ricotta.
  5. Sprinkle shredded cheeses on top and bake in a preheated oven at 375°F (190°C) for 30-35 minutes until golden brown.
  6. Garnish with fresh herbs before serving hot.
