- 1 lb lean ground beef or turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp taco seasoning
- 1 cup Greek yogurt or ricotta cheese
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Fresh cilantro or parsley for garnish
Instructions
- Prepare the eggplant by sprinkling salt on the slices and letting them sit for 30 minutes to remove excess moisture.
- In a skillet over medium heat, sauté chopped onion in olive oil until translucent. Add minced garlic and ground meat; cook until browned.
