  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 medium carrots, sliced thinly
  • 2 celery stalks, chopped
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • ½ tsp freshly cracked black pepper
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients: Wash and chop the carrots and celery; mince the garlic.
  2. Sauté the aromatics: In a large pot over medium heat, add olive oil and sauté minced garlic for about 1 minute before adding carrots and celery until slightly softened.
  3. Brown the chicken: Push vegetables to one side of the pot and brown chicken breasts for about 5 minutes on each side.
  4. Add broth & seasonings: Pour in enough chicken broth to cover everything; sprinkle in thyme and pepper.
  5. Simmer: Bring to a gentle boil, then reduce heat to low; cover and simmer for approximately 20 minutes or until chicken is cooked through.
  6. Shred & serve: Remove chicken from the pot, shred it with two forks, return it to the soup, stir well, and enjoy!
