  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 2 tbsp olive oil
  • 1 lb baby potatoes, halved
  • 2 cups vibrant carrots, chopped
  • Salt and pepper to taste
  • 1 tsp dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper; place them in the prepared baking dish.
  3. In a bowl, whisk together Dijon mustard and maple syrup until smooth.
  4. Scatter halved potatoes and chopped carrots around the chicken; drizzle with olive oil, season with thyme, salt, and pepper.
  5. Pour half of the glaze over the chicken. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and veggies are tender. Drizzle remaining glaze halfway through cooking.
