  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fettuccine or penne pasta
  • 2 tsp Cajun seasoning
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 cup bell peppers (sliced; mixed colors)
  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 medium onion (chopped)
  • 1 cup low-sodium chicken broth

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add seasoned chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and let rest.
  3. In the same skillet, add garlic and onion, sautéing until translucent (3-4 minutes). Stir in bell peppers.
  4. Pour in heavy cream and chicken broth, adding Cajun seasoning. Let simmer for 5 minutes until slightly thickened.
  5. Gradually stir in Parmesan cheese until melted and smooth.
  6. Return cooked chicken to the skillet with pasta, tossing everything together until well coated in sauce.
