  • 2 stalks celery, chopped

  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the onions, carrots, and celery until softened (about 5 minutes).
  2. Add minced garlic, cumin, and turmeric; cook for an additional minute.
  3. Stir in the rinsed lentils and vegetable broth; bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 30 minutes or until lentils are tender.
  5. Stir in freshly squeezed lemon juice before serving.
  6. Blend with an immersion blender for a smooth texture or leave chunky based on preference.
