- 1 cup whole milk
- 2 large eggs

Instructions
- In a large bowl, whisk together cornmeal, flour, baking powder, sugar, and salt until well combined.
- In another bowl, mix milk and eggs until smooth. Optionally add chopped green onions or jalapeños.
- Pour the wet ingredients into the dry mixture and stir gently until just combined; lumps are okay.
- Heat vegetable oil in a deep pot over medium-high heat (around 350°F). Test with a small spoonful of batter—if it sizzles, it’s ready.
- Carefully drop spoonfuls of batter into the hot oil, frying until golden brown on all sides (about three minutes).
- Remove with a slotted spoon and drain on paper towels. Serve warm with your favorite dipping sauces.
