Ingredients

Scale
  • 1 cup short-grain rice (like Arborio)
  • 4 cups whole milk (or almond/coconut milk for a dairy-free option)
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cinnamon stick (or ½ tsp ground cinnamon)
  • Pinch of salt
  • 2 tbsp unsalted butter

Instructions

  1. Rinse the rice under cold water until clear.
  2. In a medium saucepan, combine rinsed rice and 1 cup of water; bring to a gentle boil, then simmer on low until the water is absorbed (about 10 minutes).
  3. Stir in 4 cups of milk, sugar, salt, vanilla extract, and cinnamon stick. Cook on low heat for about 30 minutes, stirring frequently until creamy.
  4. If the mixture thickens too fast, add more milk as needed.
  5. Once creamy, remove from heat and stir in butter until melted.
  6. Serve warm or chill in the refrigerator; top with additional cinnamon or fresh fruits.
