- 1/4 cup sour cream (full-fat)

- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter (melted)

Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter until combined. Press into mini muffin tins lined with paper liners.
- Bake crust for 8-10 minutes until golden brown. Allow to cool slightly.
- In another bowl, beat cream cheese and sugar until smooth. Mix in sour cream and vanilla extract.
- Spoon filling over cooled crusts until three-quarters full and top with sprinkles.
- Bake at 325°F (160°C) for an additional 15-18 minutes until set but slightly jiggly in the center.
- Cool completely at room temperature, then refrigerate for at least 2 hours before serving.
