  • 2 lbs chuck roast, cubed
  • 1 bottle (12 oz) Guinness stout
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans, rinsed
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 12 bell peppers, diced

Instructions

  1. In a large pot over medium heat, brown the cubed chuck roast in oil for about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic until translucent, about 5 minutes.
  3. Add diced bell peppers, chili powder, and cumin; stir for another minute.
  4. Pour in Guinness while scraping up any browned bits from the pot; bring to a simmer.
  5. Return the beef to the pot along with crushed tomatoes and kidney beans; mix well.
  6. Cover and simmer on low heat for 60-120 minutes to deepen flavors.
