- 2 lbs chuck roast, cubed
- 1 bottle (12 oz) Guinness stout
- 1 can (28 oz) crushed tomatoes
- 1 can (15 oz) kidney beans, rinsed
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1–2 bell peppers, diced
Instructions
- In a large pot over medium heat, brown the cubed chuck roast in oil for about 5-7 minutes. Remove and set aside.
- In the same pot, sauté diced onion and minced garlic until translucent, about 5 minutes.
- Add diced bell peppers, chili powder, and cumin; stir for another minute.
- Pour in Guinness while scraping up any browned bits from the pot; bring to a simmer.
- Return the beef to the pot along with crushed tomatoes and kidney beans; mix well.
- Cover and simmer on low heat for 60-120 minutes to deepen flavors.
