Ingredients

  • 1 cup jasmine or basmati rice
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tsp fresh ginger, grated
  • 2 green onions, sliced (for garnish)
  • 1 tsp sesame oil (for drizzling)
  • 1 tbsp sriracha sauce (adjust to taste)
  • Juice of 1 lime

Instructions

  1. Prepare rice according to package instructions; set aside.
  2. In a large skillet over medium heat, add oil and sauté chopped onion and minced garlic until translucent.
  3. Add ground turkey to the skillet, breaking it apart until browned (about 5-7 minutes). Season with salt and pepper.
  4. Stir in diced bell peppers and grated ginger; cook for an additional 3-4 minutes until veggies are tender yet crunchy.
  5. Pour in soy sauce, sriracha sauce, and lime juice; mix well and let simmer for 2-3 minutes.
  6. Assemble bowls: layer cooked rice at the bottom and top with turkey mixture. Garnish with sliced green onions and drizzle sesame oil before serving.
