- 1 medium zucchini, diced
- 2 medium sweet potatoes, peeled and cubed (about 2 cups)

Instructions
- Wash and peel the sweet potatoes; cut them into half-inch cubes.
- In a large skillet over medium heat, add olive oil and sauté diced onions until translucent (about 4 minutes).
- Add sweet potato cubes to the skillet; cook for about 5 minutes until slightly tender, seasoning with salt and pepper.
- Push sweet potatoes to one side of the skillet; add ground beef on the other side. Cook until browned (about 6 minutes), breaking it apart as it cooks.
- Mix in zucchini and minced garlic; allow everything to cook together for an additional 5 minutes until vegetables are tender.
