Ingredients
- 8 oz fusilli pasta
- 2 ears fresh corn on the cob
- 2 ripe avocados (diced)
- 1 cup cherry tomatoes (halved)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup fresh cilantro (chopped)
- Juice of 1 lime
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water. Cook the fusilli pasta according to package instructions until al dente. Drain and rinse with cold water.
- Preheat the grill to medium-high heat. Husk the corn and grill for about 10 minutes, turning occasionally until charred. Let cool before slicing off kernels.
- In a large bowl, combine cooked pasta, grilled corn, diced avocados, halved cherry tomatoes, sliced onion, and chopped cilantro.
- Drizzle lime juice and olive oil over the mixture. Season with salt and pepper to taste and toss gently.
- Serve in bowls garnished with additional cilantro if desired.
