  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup brown sugar
  • 1 large egg
  • ½ cup molasses
  • 1 tsp vanilla extract
  • For the Filling: 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, cream butter with brown sugar until fluffy. Mix in egg, molasses, and vanilla.
  4. Gradually combine dry ingredients into wet mixture until just mixed.
  5. Scoop tablespoon-sized dollops onto baking sheets and bake for 10-12 minutes until springy.
  6. Cool on wire racks; beat cream cheese and butter together for the filling and mix in powdered sugar.
  7. Assemble pies by spreading filling between two cake halves.
