Ingredients
Scale
- 3–4 lbs beef chuck roast
- 4 cups low-sodium beef broth
- 2 medium onions, sliced
- 4 cloves garlic, minced
- 4 crusty French rolls
- 1 tbsp fresh thyme (or 1 tsp dried)
- Freshly cracked black pepper to taste
Instructions
- Gather all ingredients on the counter.
- In a large skillet over medium-high heat, sear the beef chuck roast on all sides until browned (about 4 minutes per side).
- Transfer the roast to a slow cooker or Dutch oven. Add sliced onions, minced garlic, thyme, black pepper, and enough beef broth to cover half of the roast (about 4 cups).
- Cover and cook on low for 6 to 8 hours until tender.
- Remove the roast from the liquid and shred it using two forks; return shredded beef to the pot to soak up more flavor.
- Slice French rolls open and fill them with shredded beef. Serve with warm broth for dipping.
