  • 4 cups low-sodium beef broth

  • 4 crusty French rolls

  • Freshly cracked black pepper to taste

Instructions

  1. Gather all ingredients on the counter.
  2. In a large skillet over medium-high heat, sear the beef chuck roast on all sides until browned (about 4 minutes per side).
  3. Transfer the roast to a slow cooker or Dutch oven. Add sliced onions, minced garlic, thyme, black pepper, and enough beef broth to cover half of the roast (about 4 cups).
  4. Cover and cook on low for 6 to 8 hours until tender.
  5. Remove the roast from the liquid and shred it using two forks; return shredded beef to the pot to soak up more flavor.
  6. Slice French rolls open and fill them with shredded beef. Serve with warm broth for dipping.
